Chewy Baked Egg Soy Braise
My Absolute Favorite Side Dish: SuMiNe BanChan Style Baked Egg Jangjorim is Truly Delicious!
Having a good batch of braised eggs as a side dish makes any meal feel complete and satisfying. Today, I’m making jangjorim using baked eggs, which makes it even chewier and more delicious! It’s a perfect banchan to have on hand.
Main Ingredients
- 20 baked eggs
- 1 handful of dried anchovies (for broth or stir-fry)
- 1 stalk green onion
- About 15 Korean chili peppers (kkwarigochu)
- 1 shiitake mushroom
Braising Sauce
- 3 cups water
- 1/2 cup soy sauce (jin ganjang)
- 1 Tbsp sugar
- 2 Tbsp oligosaccharide
- 1 Tbsp sesame oil
- 3 cups water
- 1/2 cup soy sauce (jin ganjang)
- 1 Tbsp sugar
- 2 Tbsp oligosaccharide
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, peel the shells off the baked eggs. For the anchovies, use ones meant for stir-frying or clean ones with the guts removed if using for broth. For the Korean chili peppers, use a fork to prick 2-3 small holes in each pepper; this helps the sauce penetrate better.
Step 2
Place the peeled baked eggs snugly into a wide, deep pot.
Step 3
Add the green onion, cut into bite-sized pieces (about 3-4 cm long), the pricked Korean chili peppers, the prepared anchovies, and the cleaned shiitake mushroom on top of the eggs. Arrange them attractively, layering them with the eggs.
Step 4
Prepare the braising sauce by combining 3 cups of water, 1/2 cup of soy sauce, 1 tablespoon of sugar, and 2 tablespoons of oligosaccharide. Pour this sauce mixture over the ingredients in the pot. The liquid should come about halfway up the ingredients.
Step 5
Place the pot over high heat and bring it to a boil. Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer for about 20 minutes, allowing the flavors to meld. Gently turn the eggs over once or twice during this time to ensure even seasoning.
Step 6
As the braising nears completion, stir in 1 tablespoon of sesame oil for added aroma and flavor. Finish by sprinkling a generous amount of toasted sesame seeds over the top. Your delicious baked egg jangjorim is now ready to be enjoyed with a warm bowl of rice!
