Main Ingredients
  • Canned corn kernels, drained, 200g
  • Peanuts, shelled, 7 pieces
  • Egg, 1

Batter & Frying Ingredients
  • All-purpose flour, 2 Tbsp
  • Sugar, 3 Tbsp
  • Cooking oil (for frying), generous amount

Cooking Instructions

Step 1

Drain the canned corn kernels thoroughly using a sieve. It’s important to remove as much moisture as possible to prevent oil splattering during frying.

Step 2

Finely chop the drained corn kernels with a knife. Also, chop the peanuts finely; this will enhance the texture of your corn fritters.

Step 3

In a mixing bowl, combine the egg yolk, chopped corn, chopped peanuts, and 2 tablespoons of flour. Mix well until all ingredients form a cohesive batter. Knead slightly if needed until it holds together.

Step 4

Heat a generous amount of cooking oil in a pot over medium heat. Using a spoon, carefully drop portions of the batter, about 3cm in diameter, into the hot oil. Fry for about 3-4 minutes until golden brown and crispy.

Step 5

In a separate small saucepan, combine 3 tablespoons of sugar and 1 tablespoon of cooking oil. Cook over low heat, stirring constantly, until the sugar melts and caramelizes into a golden syrup. Be careful not to burn the sugar.

Step 6

Remove the fried fritters from the oil and briefly drain them on paper towels. Lightly grease a plate or serving bowl with a little oil. Add the syrup to the fritters and quickly toss to coat. Serve immediately to maintain their crispiness.
