Try making these delicious pancakes using carrots, which you might usually only enjoy as juice. Sliced into shreds and pan-fried, these carrot pancakes offer a delightful crispiness on the outside and natural sweetness within. It’s a simple recipe perfect for a healthy snack or a tasty side dish.
Main Ingredients
- 1 medium carrot
- 5 Tbsp pancake mix (buchim garu)
- 1g salt (approx. 1/5 tsp)

Step 1
First, wash the carrot thoroughly. Then, use a mandoline slicer or a knife to shred the carrot thinly and evenly. Aim for thin shreds, as this affects the texture – not too thick is best.

Add about 1g of salt to the shredded carrots. Since pancake mix can sometimes be seasoned, we’re using a very small amount of salt to enhance the carrot’s natural sweetness and add a subtle flavor.

Gently toss the shredded carrots with the salt and let them sit for about 15-20 minutes. This will help draw out the natural moisture from the carrots, making the pancakes more tender and moist. (I let mine sit for about 20 minutes while I did other kitchen tasks.)

Now, add 5 tablespoons of pancake mix to the carrots that have released some moisture. The amount of flour needed might vary depending on the size of the carrot and how much moisture it has released, so it’s good to adjust the amount while checking the batter consistency.

Mix the pancake mix lightly into the carrots, ensuring it coats the shreds rather than forming a thick batter. You want the carrot strands to be distinct, with just a light coating of the mix, not a dense dough.

This consistency is just right. The goal is to maintain the carrot’s crispness while having a thin layer of batter.

Heat a generous amount of cooking oil in a frying pan over medium-low heat. Drop spoonfuls of the carrot mixture into the hot pan, shaping them into small, flat pancakes.

Once one side is golden brown and crispy, flip the pancake and cook the other side until it’s also golden and crisp. Be sure to manage the heat so they don’t burn. Flip them occasionally to ensure even cooking on both sides.
