Crispy and Juicy Baekpa The Snow Blossom Dumpling Recipe
Baekpa The Snow Blossom Dumpling Guide: Easy for Beginners
Hello there! Today, I’m sharing a fantastic recipe for ‘Snow Blossom Dumplings’ (also known as Binghua dumplings), which were once only found at popular dumpling restaurants. These dumplings are named ‘Snow Blossom’ because their bottoms are wonderfully crispy, while the tops are steamed to a perfect tenderness, resembling delicate snow flowers. The principle behind them is surprisingly simple, making them achievable even at home! Let’s create these delicious crispy-on-the-bottom, moist-on-the-top dumplings with Baekpa’s method.
Dumplings
- 8 store-bought gyoza dumplings
- 1 Tbsp tempura flour
- 1/2 cup water (using a paper cup)
- 2 Tbsp cooking oil
Simple Dipping Sauce
- 1 Tbsp soy sauce
- 2 Tbsp vinegar
- 1/3 Tbsp minced garlic
- Pinch of chili powder (to taste)
- 1 Tbsp soy sauce
- 2 Tbsp vinegar
- 1/3 Tbsp minced garlic
- Pinch of chili powder (to taste)
Cooking Instructions
Step 1
Before turning on the heat, arrange the 8 gyoza dumplings in a circle in the frying pan, close enough so they touch each other. This helps them stick together and maintain their shape as they cook.
Step 2
Now, let’s prepare the ‘snow water’ that will make our dumplings wonderfully crispy. You can use tempura flour, pancake mix, regular flour, or potato starch, but tempura flour tends to yield the crispiest results. You’ll need 1 tablespoon of tempura flour, 1/2 cup of water (measured with a paper cup), and 2 tablespoons of cooking oil.
Step 3
In a bowl, whisk together the tempura flour, water, and cooking oil until well combined and smooth. Ensure there are no lumps for an even coating.
Step 4
It’s time to cook! First, heat the pan over high heat. Once you hear a sizzling sound when the dumplings start to cook, pour the prepared tempura flour mixture evenly over and around the dumplings. Immediately cover the pan with a lid and continue to cook over high heat for exactly 4 minutes.
Step 5
After 4 minutes, lift the lid. You’ll see that the bottoms of the dumplings have turned a lovely golden brown. If you find the bottoms are browning too quickly, you can slightly increase the amount of water in the tempura mixture next time. However, it’s important to stick to the 4-minute cooking time.
Step 6
Now, let’s plate these beautiful snow blossom dumplings. Place a plate that fits the diameter of your pan on top of the pan. Holding both the plate and the pan handle firmly, carefully flip them over together. This will transfer the dumplings neatly onto the plate.
Step 7
Your Baekpa The Snow Blossom Dumplings are ready! They boast a delightful crispy bottom and a tender, moist top. For an extra burst of flavor, prepare a simple dipping sauce by mixing 1 Tbsp soy sauce, 2 Tbsp vinegar, 1/3 Tbsp minced garlic, and a pinch of chili powder. Enjoy your delicious homemade dumplings!
