Cooking Instructions

First, prepare 300g of fresh lotus root. Use a peeler to thoroughly remove the skin, then slice it thinly, about 0.3cm thick. Slicing them thinly makes them tender and easier to eat after cooking.

Place the sliced lotus root in a large bowl and cover generously with cold water. Add 1 tablespoon of vinegar to the water and let it soak for about 10 minutes. This step helps remove any astringency from the lotus root and prevents browning, keeping its fresh color.

In a pot, bring plenty of water to a boil. Once boiling, add 1 tablespoon of vinegar and 1 teaspoon of salt. Add the prepared lotus root to this boiling water and blanch for about 15 minutes until tender. Adjust the cooking time based on the size and thickness of your lotus root slices. Be careful not to overcook, as they can become mushy.

Immediately drain the blanched lotus root and rinse it quickly under cold running water. Rinsing in cold water helps cool them down and preserves their crisp texture.
