Easy Zucchini Pancake Recipe: Crispy Zucchini Fritters with Perfectly Balanced Batter and Vegetables
Here’s a simple recipe for homemade zucchini pancakes that you can enjoy anytime. Whether you shape them into circles or shred them into fritters, they make a delightful side dish or snack. They’re crispy on the outside and tender on the inside, a flavor loved by everyone, young and old.
Zucchini Pancake Ingredients
- 1/2 medium zucchini (approx. 167g)
- 43g onion
- 34g carrot
- 0.4 Tbsp fish sauce (approx. 3ml)
- 80ml pancake mix (approx. 50g)
- 100ml water
- Plenty of cooking oil (canola oil recommended)
Sweet and Tangy Dipping Sauce
- 1 Tbsp soy sauce (15ml)
- 1 Tbsp water (15ml)
- 0.5 Tbsp vinegar (7.5ml)
- 1 Tbsp soy sauce (15ml)
- 1 Tbsp water (15ml)
- 0.5 Tbsp vinegar (7.5ml)
Cooking Instructions
Step 1
First, wash the zucchini thoroughly under running water. Prepare half of a zucchini (about 167g) after patting it dry.

Trim the ends of the zucchini and slice it diagonally to about 3-4mm thickness. If they are too thick, they will take longer to cook.

Now, cut the diagonally sliced zucchini into thin strips, about 3-4mm thick. Cutting them into strips makes them crispier and easier to eat.

Peel and thinly slice the onion and carrot into strips, about 3mm thick, similar to the zucchini. These will add color and a touch of sweetness.

Combine all the julienned zucchini, carrots, and onions in a large bowl.

Add 80ml of pancake mix and 0.4 Tbsp of fish sauce to the julienned vegetables. The fish sauce will enhance the umami flavor and provide seasoning.

Pour in 100ml of water to achieve the right batter consistency. Be careful not to make it too watery.

Using a spoon, mix the vegetables, pancake mix, fish sauce, and water until everything is evenly combined. Taste a small amount of the batter: if it’s too bland, add a pinch of salt; if it’s too salty, add a little more water to adjust the consistency. Avoid overmixing.

Heat a generous amount of cooking oil in a frying pan over medium heat. Once the pan is well preheated, ladle spoonfuls of the batter into the pan, forming round, flat pancakes. Don’t stir them immediately after placing them in the pan. Let them cook undisturbed until the edges start to crisp up; this helps maintain their shape and ensures crispiness.

When the edges of the zucchini pancakes turn golden brown and the bottoms seem firm, carefully flip them over using a spatula. Be mindful to flip them neatly for a good presentation.

After flipping, gently press down on the pancakes with the spatula to ensure even contact with the pan. This helps them cook through evenly and become extra crispy. Wait until the second side also turns golden brown.
