Main Ingredients
  • 1 bunch fresh garlic scapes
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp sesame oil

Spicy & Sweet Sauce
  • 2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp plum extract (maesilcheong)
  • 1/2 Tbsp soy sauce
  • 1 Tbsp gochugaru (Korean chili flakes, adjust to taste)
  • 1 Tbsp sugar
  • 1/2 Tbsp vinegar

Cooking Instructions

Step 1

First, thoroughly wash the fresh garlic scapes under running water. Then, cut them into bite-sized pieces, about 5-6 cm (2-2.5 inches) long. Cutting them into manageable lengths will make them easier to eat.

Step 2

While the garlic scapes are being prepared, let’s make the delicious sauce. In a bowl, combine 2 Tbsp gochujang, 1 Tbsp plum extract, 1/2 Tbsp soy sauce, 1 Tbsp gochugaru, 1 Tbsp sugar, and 1/2 Tbsp vinegar. Mix well until there are no lumps.

Step 3

Now, it’s time to briefly blanch the garlic scapes. Fill a pot with plenty of water and bring it to a boil. Once boiling, add 1 Tbsp of salt. Carefully add the prepared garlic scapes to the boiling water and blanch for just 30 seconds. Blanching for too long will make them mushy, so a short blanch is key to preserving their crisp texture. Immediately rinse the blanched garlic scapes under cold water to stop the cooking process.

Step 4

Gently pat dry the cold-rinsed garlic scapes. Add the prepared sauce mixture to the garlic scapes. Gently toss and mix everything together, ensuring that each piece of garlic scape is evenly coated with the sauce.

Step 5

Finally, let’s add the finishing touches for extra flavor! Stir in 1 Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds. Mix gently one last time. The nutty aroma from the sesame will make this dish even more irresistible.

Step 6

And there you have it – a perfectly crispy, spicy, and sweet Stir-fried Garlic Scapes with Gochujang! It’s a simple yet incredibly satisfying side dish that complements any meal. Enjoy your delicious creation!
