Octopus Sausage and Garlic Scape Stir-fry: Perfect for a Side Dish!
Let’s make some cute octopus sausages! Stir-fry them with garlic scapes for a delightful side dish that’s as pleasing to the eyes as it is to the palate. Its charming appearance makes it a perfect accompaniment to rice, and the savory-sweet flavor will have everyone asking for seconds.
Main Ingredients
- Vienna sausages 1/2 bag (approx. 100g)
- Garlic scapes 2 stalks (approx. 150g)
- Salt a pinch (for blanching)
- Cooking oil 1 Tbsp

- Oligosaccharide 1/2 Tbsp
- Sesame oil 1/2 Tbsp
- Sesame seeds to taste

Cooking Instructions
Step 1
First, wash the garlic scapes thoroughly. Once drained, cut them into bite-sized pieces, about 3-4 cm long. Cutting them to a manageable length will make stir-frying easier.
Step 2
Let’s create the cute octopus-shaped sausages! Lightly trim about 1 cm off one end of the Vienna sausage. This will create space for your knife to make cuts.
Step 3
Now, let’s make the octopus shape with cuts. First, make 3-4 cross-shaped cuts (+) at the trimmed end of the sausage. Then, add additional ‘X’ shaped cuts in between the cross cuts. This will help the sausage curl up into a charming octopus shape when cooked.
Step 4
Bring a pot of water to a boil and add a pinch of salt. Blanch the prepared garlic scapes for about 30 seconds. This step reduces their slightly pungent flavor and softens their texture. After blanching, rinse the garlic scapes under cold water and drain them well.
Step 5
In the same boiling water, add the cut Vienna sausages and blanch for about 1 minute. As they cook, the cut ends will curl outwards, transforming into cute octopus shapes! Drain both the blanched garlic scapes and the octopus sausages thoroughly. Excess water can cause splattering or a soggy texture.
Step 6
Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the prepared garlic scapes and octopus sausages and stir-fry together. Once the garlic scapes start to turn translucent and the sausages begin to brown slightly, add 1 Tbsp of soy sauce and 1/2 Tbsp of oligosaccharide. Stir quickly to coat everything. Finally, drizzle in 1/2 Tbsp of sesame oil and sprinkle with sesame seeds, stir once more, and your delicious stir-fry is ready!
