Main Ingredients
- 300g bean sprouts
- 2 Tbsp minced garlic
- 2 Tbsp chopped green onion
- 1 Cheongyang pepper (optional)
Seasoning
- 1.5 Tbsp gochugaru (Korean chili flakes)
- 1.5 Tbsp soy sauce
- 2 Tbsp sesame oil
- 2 Tbsp sesame seeds
- Pinch of salt (adjust to taste)

Cooking Instructions
Step 1
Rinse the fresh bean sprouts thoroughly under running water multiple times. Place the rinsed bean sprouts in a pot with a small amount of water. Cover with a lid and boil over high heat for 3-5 minutes until cooked. It’s crucial to cook them until they are crisp and free of a raw smell. Drain the cooked bean sprouts in a colander, rinse briefly under cold water to cool them down, and then completely drain any excess water. If there’s residual water, the seasoning will be diluted, so gently squeeze them by hand to remove as much moisture as possible.
Step 2
Now, prepare the seasoning ingredients. In a bowl, add the blanched and cooled bean sprouts. Add 2 Tbsp of minced garlic, 2 Tbsp of chopped green onion, and 1.5 Tbsp of gochugaru. If you prefer a spicier dish, finely chop 1 Cheongyang pepper and add it here.
Step 3
Once the seasoning ingredients are ready, add 2 Tbsp of sesame oil and 2 Tbsp of sesame seeds. Instead of seasoning with salt right away, it’s better to taste and adjust with salt at the very end. Gently mix the ingredients with your hands so they don’t clump together. Mix gently, similar to how you would mix jajangmyeon, ensuring the bean sprouts are not mashed, which is the secret to keeping their crunchy texture.
