This fall, let’s make a delicious and refreshing Napa Cabbage Kimchi Salad (Geotjeori) that’s perfect for whetting your appetite. Its fresh, spicy, and slightly sweet flavors will make it a staple side dish.
Salad Ingredients
- 1 head Napa cabbage (medium size)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 tsp Fish sauce (anchovy or sand lance)
- 1 tsp Sugar
- 1 handful Scallions (chopped)
- 1 tsp Minced garlic
- Coarse salt (for salting cabbage)

Following Chef Baek Jong-won’s popular recipe, we’ll make this geotjeori without rinsing after salting. First, thoroughly wash the Napa cabbage. Rinse it under running water, paying attention to the leaves to remove any dirt. Cut the cabbage into bite-sized pieces, about 4-5 cm wide. Salt the cabbage using coarse salt for about 10 minutes to make it crispy. Lightly squeeze out the water that comes out of the cabbage after salting. (Avoid squeezing too hard, as it can reduce crispiness.)

Now, let’s prepare the flavorful seasoning. In a bowl, combine all the prepared seasoning ingredients. Add 2 Tbsp Gochugaru (Korean chili flakes), 1 tsp fish sauce, 1 tsp sugar, 1 handful of chopped scallions, and 1 tsp minced garlic. Mix them well.

Once the seasoning is ready, add the lightly squeezed cabbage to the bowl. Gently mix and toss the cabbage with your hands, ensuring the seasoning is evenly distributed. It’s important to mix gently with your fingertips so that the seasoning coats every piece of cabbage without crushing it.
