Essential Ingredients
- 1.5 cups pancake mix (approx. 180g)
- 1 and 2/3 cups water (approx. 400ml)
- 2 cups stir-fried kimchi (approx. 300g, with a little juice)
- Cooking oil, as needed
Cooking Instructions
Step 1
First, measure out 1.5 cups (approx. 180g) of pancake mix into a large bowl. If you are using flour or a different type of mix instead of pancake mix, you may need to adjust the amount of water.

Next, pour in 1 and 2/3 cups (approx. 400ml) of cold water. The consistency of the batter can vary slightly depending on the ratio of pancake mix to water, so adjust the water amount as you check the consistency. A slightly thinner batter will result in a thinner, crispier pancake.
Step 3
If you desire a spicier and more piquant flavor, add 1 tablespoon of red pepper powder. You can omit this if you don’t like spicy food or if you are making it for children.

Using a whisk or chopsticks, mix the ingredients until there are no lumps in the batter. Be careful not to overmix or whisk vigorously, as this can activate the gluten in the flour and make the pancake tough. It’s best to mix just until the dry ingredients disappear.

Now, add 2 cups (approx. 300g) of delicious stir-fried kimchi and mix it well with the batter. If the stir-fried kimchi is too watery, the batter might become too thin, so it’s recommended to drain some of the juice or use kimchi that has less liquid.

For added umami, I’ve added 100g (1 can) of drained canned tuna in this recipe. Tuna makes the flavor even richer! Of course, it’s delicious enough with just the stir-fried kimchi without tuna. You can also add finely chopped squid, shrimp, or other seafood or vegetables according to your preference.

When using canned tuna, letting it sit for about 5 minutes after opening the can before using it is said to help dissipate some of the ‘furan,’ a potential carcinogen that can form when heated. Enjoy it safely and deliciously!

Heat a pan generously with cooking oil. Ladle a portion of the prepared batter onto the hot pan and spread it thinly.
