  • 1 White part of leek
  • 3-4 Bay leaves
  • 2 Cups Water

Seasoning Ingredients
  • 9 Tbsp Soy sauce
  • 5 Tbsp Sugar
  • 3 Tbsp Mirin (rice wine)
  • 3 Tbsp Plum extract
  • 3 Tbsp Minced garlic
  • 1 Tbsp Minced ginger
  • 2 Tbsp Sesame oil
  • A pinch of Black pepper

Cooking Instructions

Step 1

First, gently rinse the pork ribs under cold running water to clean them. This step helps remove any blood and impurities.

Step 2

In a pot, add about 1.5 liters of water and bring it to a rolling boil. Once boiling, add the bay leaves and the white parts of the leek to infuse the water with flavor. (If you have whole peppercorns, adding them now will further help eliminate any gamey smell.) Add the pork ribs to the boiling water and blanch for 1-2 minutes. This process is crucial for removing impurities and the pork’s odor. Once impurities float to the surface and the meat is partially cooked, remove the ribs and discard this water. It’s solely for blanching.

Step 3

Rinse the blanched pork ribs thoroughly under cold running water again. Meticulously clean off any blood residue or impurities clinging to the bones to ensure a clean taste.

Step 4

Place the cleaned pork ribs in a colander to drain excess water. While they are draining, let’s prepare the delicious glaze for the ribs.

Step 5

In a bowl, combine 9 Tbsp soy sauce, 5 Tbsp sugar, 3 Tbsp mirin, 3 Tbsp plum extract, 3 Tbsp minced garlic, 1 Tbsp minced ginger, 2 Tbsp sesame oil, and a pinch of black pepper. Mix everything thoroughly until well combined to create the glaze.

Step 6

Now, add the blanched pork ribs, the prepared glaze, and 2 cups of water to the pot. Make sure the ribs are well coated with the glaze.

Step 7

Cover the pot and bring to a boil over high heat for about 20 minutes. The glaze will start to thicken and coat the ribs as it simmers.

Step 8

After 20 minutes, reduce the heat to medium and continue to simmer, uncovered, for at least another 20 minutes. During this time, the sauce will reduce further, infusing the meat with deep flavor and making it incredibly tender. Let it simmer until the sauce is nicely thickened.

Step 9

Continue cooking until the sauce has thickened considerably and coats the ribs in a rich, appetizing brown color. Turn the ribs occasionally to ensure even glazing. Once the sauce is reduced to a thick, syrupy consistency, turn off the heat and finish.
