Main Ingredients

  • 1.5 cups well-fermented kimchi (finely chopped)
  • 4 Tbsp kimchi brine
  • 3 Tbsp tofu (mashed)
  • 1/2 cup bean sprouts (blanched)
  • 2 Tbsp onion (finely chopped)
  • 1 large egg
  • 4 Tbsp pancake mix

Prepare the ingredients for the kimchi pancake. Finely chop the bean sprouts and onion, which will add a delightful crunch. Mash the tofu after squeezing out excess water. For softer bean sprouts and to remove any potential raw smell, briefly blanch them before chopping.

Finely chop the kimchi into bite-sized pieces. Using a food processor or chopper can make this step quick and easy.

In a large bowl, combine the chopped kimchi, mashed tofu, chopped onion, and the blanched bean sprouts (ensure they are well-drained). Crack in one egg and add 4 tablespoons of pancake mix.

Mix all the ingredients thoroughly to form a batter. If the batter seems too thick, gradually add a little more kimchi brine until you reach a good consistency. The batter should be thick enough to hold its shape but not too stiff.

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Ladle portions of the batter onto the hot pan, spreading them out into thin, round shapes using the back of a spoon or spatula.

Cook the kimchi pancake over medium-low heat until golden brown and crispy on both sides. Since bean sprouts are included, cooking over high heat can burn the exterior while leaving the inside undercooked. Maintain medium-low heat for even cooking. Gently flip the pancake with a spatula to ensure it doesn’t burn.
