Ingredients
  • Anchovies (small size preferred) 1.5 cups
  • Minced garlic 1/2 Tbsp
  • Soy sauce 1 Tbsp
  • Cooking wine (Mirin) 1/2 Tbsp
  • Oligosaccharide (or corn syrup) 1 Tbsp
  • Almonds (sliced or whole) 1/2 cup
  • Pine nuts 2 Tbsp
  • Sesame oil 1 tsp

Cooking Instructions

Step 1

Heat a dry pan over medium heat. Add the anchovies and stir-fry for 2-3 minutes. This step helps to remove any fishy smell and makes the anchovies crispy. Be careful not to burn them. Break up any clumps of anchovies with your spoon.

Step 2

In a small bowl, combine the minced garlic, soy sauce, cooking wine, and oligosaccharide. Mix well to create the seasoning sauce.

Step 3

Add the almonds to the pan with the dried anchovies. Stir-fry for a minute until the almonds are fragrant. Pour the prepared seasoning sauce evenly over the anchovies and almonds. Stir-fry for another 1-2 minutes over medium-low heat until the sauce coats everything well.

Step 4

Finally, add the pine nuts and sesame oil. Stir gently for about 30 seconds to combine everything. Pine nuts can burn easily, so add them at the very end. Remove from heat and serve. This delicious and nutritious anchovy stir-fry is a perfect side dish for rice!
