Today, I’ll introduce a ‘Chive and Onion Salad’ recipe that pairs wonderfully with rich meat dishes, especially Korean intestines (gopchang) or pork belly. It’s a delightful side dish that stimulates your appetite and cuts through any greasiness.

Step 2

First, thoroughly wash the fresh chives under running water. It’s important to wash them carefully to remove any dirt. After washing, drain them completely and cut them into bite-sized pieces (about 5-7 cm), then place them in a large bowl. Thinly slice the onion. Add 1 Tbsp soy sauce, 1/2 tsp minced garlic, 1 tsp gochugaru, and 1/2 tsp sugar to the chives and onion in the bowl. Gently toss the ingredients with your hands to evenly coat the chives and onion with the seasoning. Be careful not to mix too vigorously, as this can bruise the chives.
