  • 3 Mushrooms (e.g., Button or Cremini)
  • 1 Green Onion (Scallion)
  • 1/2 Tbsp Minced Garlic
  • 4 Red Pepper Flakes (Peperoncino) (adjust to taste)
  • 1/2 cup Mirin or Rice Wine
  • 3 Tbsp Olive Oil
  • 1/2 cup Cheese (e.g., Mozzarella or Cheddar)

Cream Sauce Ingredients
  • 1 cup Tomato Sauce
  • 1/2 cup Milk
  • 1/2 cup Heavy Cream
  • 1/2 cup Beef Broth (reserved from boiling ribs)
  • 1 Tbsp Butter
  • Pinch of Black Pepper

Cooking Instructions

Step 1

Begin by preparing the beef short ribs. Rinse 1kg of short ribs under cold water to remove any residual blood. In a pot of boiling water, add 1/2 cup of mirin (or rice wine) and carefully place the short ribs into the water. This step helps to tenderize the meat and remove any impurities.

Step 2

As the ribs simmer, skim off any foam or impurities that rise to the surface periodically. Let the ribs boil for about 25 minutes. Once done, drain the ribs and rinse them thoroughly under cold running water to remove any remaining residue. Pat them dry.

Step 3

Prepare the aromatics and vegetables. Dice the 1/2 onion into bite-sized pieces. Slice the 3 mushrooms. Finely chop the 1 green onion.

Step 4

Heat 3 tablespoons of olive oil in a large, deep skillet or pot over medium-high heat. Add the dried short ribs and sear them on all sides until nicely browned. This browning process adds a significant depth of flavor to the dish.

Step 5

Remove the seared short ribs from the skillet and set them aside. In the same skillet, add the 1/2 tablespoon of minced garlic, chopped green onion, 4 red pepper flakes (peperoncino), sliced mushrooms, and diced onion. Sauté the vegetables until the onion becomes translucent and fragrant. The red pepper flakes will add a subtle warmth.

Step 6

Once the vegetables are softened, pour in the cream sauce ingredients: 1 cup of tomato sauce, 1/2 cup of milk, 1/2 cup of heavy cream, 1/2 cup of the reserved beef broth from boiling the ribs, and 1 tablespoon of butter. Add a pinch of black pepper. Stir everything together until well combined. The butter will enrich the sauce.

Step 7

Return the seared short ribs to the skillet with the sauce. Bring the mixture to a gentle simmer over medium heat. Allow the ribs to braise in the sauce for about 10-15 minutes, letting the flavors meld together and the sauce thicken slightly.

Step 8

When the sauce has reached your desired consistency, sprinkle 1/2 cup of cheese evenly over the top. Let the cheese melt into the sauce, creating a wonderfully rich and creamy finish. Serve immediately while hot and enjoy this luxurious dish!
