Creamy Avocado Fried Rice
Taste of Travel: Creamy Avocado Fried Rice (ft. Roasted Seaweed)
This isn’t your typical crispy fried rice; it’s a soft, risotto-style fried rice. Enjoy a wonderfully creamy texture with every bite.
Ingredients
- 1 bowl of brown rice
- 1 ripe avocado
- 5-6 cherry tomatoes
- 1/4 broccoli head
- 1/4 onion
- A little bell pepper (various colors)
- 1.5 Tbsp soy sauce
- Pinch of salt
- 2 Tbsp olive oil
- Pinch of black sesame seeds
- Unseasoned roasted seaweed sheets
Cooking Instructions
Step 1
First, prepare the avocado. Insert a knife around the avocado’s circumference until it reaches the pit. Then, grasp both halves and twist them in opposite directions to separate.
Step 2
To remove the pit, carefully insert the knife into it and twist gently; it should pop out easily. Peel the skin off the avocado using the knife or your fingers. Dice the prepared avocado into bite-sized cubes.
Step 3
Wash and dice all the vegetables (onion, bell pepper, broccoli, etc.) into similar bite-sized pieces. Heat a pan over medium-low heat and add 2 Tbsp of olive oil. Add the diced onion first and sauté until translucent and lightly golden, releasing its fragrance.
Step 4
Once the onions are softened, add the blanched and frozen broccoli florets and stir-fry. As the broccoli turns bright green, add the brown rice. Use a spatula to break up any clumps of rice and stir-fry everything together. It’s important to mix well so the rice doesn’t stick. Add a pinch of salt for seasoning. Finally, add the diced avocado, cherry tomatoes, and bell peppers. Stir gently to combine, being careful not to mash the avocado, as it will cook quickly. Add the avocado last to maintain its texture.
Step 5
Now it’s time to season the fried rice. Pour 1.5 Tbsp of soy sauce along the edge of the pan to enhance its aroma as it heats. Adjust the taste with a pinch of salt if needed. Stir everything once more to ensure the flavors meld together. Sprinkle black sesame seeds on top for a nutty finish.
Step 6
Serve the creamy avocado fried rice beautifully in a bowl. For an extra special treat, wrap it in plain, crispy roasted seaweed sheets. This combination offers a delightful variation from regular fried rice, highlighting its rich flavors and tender texture. Enjoy!
