Ingredients
  • 1 cup rice (approx. 150g)
  • 2 Tbsp curry powder
  • 1 cup heavy cream (approx. 200ml)
  • 2 cups chicken stock (approx. 400ml)
  • 2 cloves garlic, minced
  • 1/3 onion, minced
  • Olive oil, for sautéing
  • Salt, to taste
  • Pepper, to taste
  • Grated Parmesan cheese, for topping

Cooking Instructions

Step 1

First, finely mince the garlic and onion. Minced garlic and onion add a fragrant depth of flavor, so prepare them meticulously.

Step 2

Heat a pan over medium heat and add a generous amount of olive oil. Sauté the minced garlic and onion until they become translucent, being careful not to burn them. It’s important to cook them until their fragrant aroma is released.

Step 3

Add the unwashed rice to the sautéed garlic and onion. Stir-fry over medium-low heat until the rice grains become translucent. Coating the outer layer of the rice grains prevents them from clumping and ensures they cook fluffy. Stir-fry for about 3-4 minutes.

Step 4

Once the rice grains start to turn translucent, begin adding warm chicken stock one ladleful at a time, stirring constantly as the rice cooks. The essence of risotto lies in cooking it by stirring and toasting as the rice absorbs the broth.

Step 5

It’s crucial to cook it by stirring! Repeat the process of adding another ladleful of broth as the rice absorbs the previous one. Continue this for about 15-20 minutes, stirring, until the rice is cooked to your desired tenderness and creaminess. You can adjust the amount of broth to achieve your preferred risotto consistency.

Step 6

When the rice is almost cooked and tender, stir in the heavy cream and curry powder. Mix well to ensure the curry powder dissolves without lumps. Cook over low heat for another 1-2 minutes until it thickens to your liking.

Step 7

Finally, season with a pinch of pepper and mix thoroughly. Transfer the finished curry risotto to a beautiful serving bowl. For an extra touch of flavor, generously sprinkle with grated Parmesan cheese. Enjoy your delicious meal!
