Main Ingredients
- Crab sticks (imitation crab meat) 6 sticks
- Cooked rice 3 bowls (warm)
- Pickled radish (danmuji) 3-4 strips
- Seaweed flakes (or seasoned seaweed sheets) enough for 5 sheets

Cooking Instructions
Step 1
First, prepare all the ingredients for your crab stick rice balls. Ensure the rice is warm. You’ll need 6 crab sticks, 3-4 strips of pickled radish, and enough seaweed flakes for about 5 sheets. (Per serving: 1 bowl of rice, 2 crab sticks, 1-2 strips of pickled radish, 1-2 sheets of seaweed)
Step 2
Gently shred the crab sticks along their natural grain, then finely chop them. Squeeze out any excess moisture from the pickled radish and chop it finely, similar to the crab sticks. Chopping them finely will enhance the texture and flavor when mixed with the rice.
Step 3
In a large bowl, add the 3 bowls of warm cooked rice. Stir in 2 Tbsp of sesame oil for a nutty aroma, 1/2 tsp of salt for seasoning, and a pinch of toasted sesame seeds. Use a spoon to gently mix everything together, being careful not to mash the rice grains, ensuring all ingredients are evenly distributed.
Step 4
Now, add the finely chopped crab sticks and pickled radish to the rice. Also, mix in 3 Tbsp of mayonnaise for a creamy texture. Gently combine all the ingredients until well incorporated, much like mixing a bibimbap.

Put on disposable gloves and take portions of the rice mixture, about the size of a child’s fist. Roll them into round balls. Aim for a size that’s easy for children to hold and eat. If the rice is too hot, it might stick to your gloves; let it cool slightly before shaping.
Step 6
Finally, spread the seaweed flakes on a plate or in a shallow bowl. Roll each molded rice ball in the seaweed flakes until evenly coated. Gently press the seaweed onto the rice balls to ensure they adhere well. Your delicious crab stick rice balls are now ready!
