Crab sticks are incredibly delicious even when eaten on their own, aren’t they? Today, I’ve prepared a pancake dish using crab sticks. This is a Crab Stick and King Oyster Mushroom Pancake, made by combining crab sticks and king oyster mushrooms. King oyster mushrooms are affordable, and their texture and flavor make them a frequent addition to my cooking. It’s said that king oyster mushrooms are great for boosting immunity, especially in cold winters like these. They also contain substances beneficial for fatigue recovery, so it’s good to eat them often. Once you make a plate of these, they’re so good you can just snack on them! They make a wonderful side dish for rice and are also a fantastic accompaniment to alcoholic beverages. Plus, since they are made without flour or pancake mix, they are easy on the stomach and great for diets too!

Ingredients
  • 1 pack King Oyster Mushrooms
  • 5 imitation crab sticks (surimi)
  • 1/4 Red Bell Pepper
  • 1/4 Yellow Bell Pepper
  • 1/4 Green Bell Pepper
  • 1/4 Onion
  • 3 Eggs
  • 3 pinches Salt (approx. 0.3g)
  • 2 pinches Black Pepper (approx. 0.1g)

Cooking Instructions

Step 1

First, wash the red and yellow bell peppers, green bell pepper, and onion thoroughly, then pat them dry. Finely mince all the vegetables. Feel free to use any other vegetables you have in your refrigerator. Utilizing leftover vegetables is a great way to reduce waste and add extra flavor.

Step 2

In a mixing bowl, add the king oyster mushrooms. You can either roughly chop them or shred them with your hands. Add the minced vegetables and the 3 eggs to the bowl. Sprinkle in 3 pinches of salt and 2 pinches of black pepper to season.

Step 3

Mix the ingredients thoroughly with a spatula or spoon until well combined. Ensure the vegetables, mushrooms, and eggs are evenly distributed to create a cohesive batter.

Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Spoon portions of the batter onto the hot pan, using two spoons to help shape them into small, round pancakes. Aim for bite-sized portions for easy handling and serving.

Once the bottom of the pancakes is golden brown and set, carefully flip them over using two spoons. Since this recipe doesn’t use flour, the batter is softer and requires a gentle touch when flipping to prevent them from breaking. Cook until golden brown on both sides.
