- 10-15 Peppercorns
- 1 Red chili pepper
- 1/2 Leek (for garnish)
Broth Seasoning
- 1 Tbsp Salt
- 1 Tbsp Oyster sauce
- 1 Tbsp Sugar
- 1L Water or Stock
Dipping Sauce (Galbitang Sauce)

- 1 Tbsp Sugar
- 1.5 Tbsp Vinegar
- 2 Tbsp Water
- 1 Tbsp Salt
- 1 Tbsp Oyster sauce

Cooking Instructions
Step 1
First, soak the pork back ribs in cold water for 1-2 hours to remove any blood. Changing the water multiple times during this process will help remove blood more effectively.

To ensure a clear broth, we’ll blanch the ribs. Bring a pot of water to a boil, add 3 bay leaves, then submerge the pork ribs. Once the water returns to a boil, let it simmer for about 5 minutes to remove impurities.

Rinse the blanched ribs thoroughly under cold water. While rinsing, trim away any excess fat or any unpleasant bits from between the bones. This step contributes to a clearer and milder broth.

Now, let’s start making the broth. Place the cleaned pork back ribs in a deep pot. Add the roughly chopped onion, leeks, and minced ginger. Pour enough water to completely cover the ribs.

Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium, cover the pot, and simmer for 1 hour to thoroughly extract the rich flavor from the pork bones. After simmering, remove and set aside the cooked vegetables, or discard them.
