Main Ingredients
  • 100g square fish cakes (oden)
  • A moderate amount of carrot
  • A moderate amount of oyster mushrooms
  • 1/3 eggplant
  • 5 cloves whole garlic
  • 1 chili pepper (optional, to taste)

Seasoning
  • 1 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

First, prepare the vegetables. Wash the carrot and eggplant thoroughly and julienne them into thin strips. For the oyster mushrooms, remove the tough ends and tear them into bite-sized pieces by hand. Prepping the vegetables like this makes stir-frying much smoother.

Step 2

Peel the whole garlic cloves and slice them thinly into rounds. The garlic’s aroma will infuse into the oil, enhancing the umami flavor of the stir-fry.

Step 3

Briefly blanch the square fish cakes in boiling water to remove excess oil, then rinse them under cold water. Cut the fish cakes into bite-sized pieces, about 1cm wide. Blanching helps achieve a tender texture and removes impurities.

Step 4

Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the sliced garlic and sauté until fragrant, then increase the heat to high. Add the prepared carrot, eggplant, and oyster mushrooms, and stir-fry quickly to maintain a slight crispness. Cook just until the vegetables begin to soften slightly.

Step 5

For added color and a hint of spice, thinly slice the chili pepper (seeds removed, if preferred) and add it to the pan. This is great if you like a mild kick.

Step 6

Reduce the heat to medium. Add 1 tablespoon of soy sauce and 1 tablespoon of sugar. Stir well to ensure the vegetables and seasoning are evenly combined. Cook for about 1 minute, allowing the flavors to meld.

Step 7

Finally, add the cut fish cakes to the pan and stir-fry for another 1-2 minutes until the seasoning coats everything well. Just before turning off the heat, generously sprinkle 1 tablespoon of sesame seeds for a nutty aroma. Enjoy this delicious side dish with your meal!
