Clear Codfish Soup Ingredients
- 1 whole codfish (cut into 6-7 pieces)
- 1 piece of radish (approx. 2 inches thick)
- 1/4 large onion
- 1/3 zucchini
- 1/2 bunch of crown daisy (ssukgat)
- 0.5 Tbsp minced garlic
- 1/3 stalk of green onion
- 600ml anchovy broth
- Salt and anchovy sauce to taste
- 1-2 Cheongyang chili peppers (optional)
Anchovy Broth Ingredients
- 1 handful dried anchovies
- 1 handful dried anchovy for broth (Diphuri)
- 1 sheet dried kelp (15x10cm)
- 1 piece radish (approx. 2 inches thick)
- 1L water

Cooking Instructions
Step 1
First, let’s prepare the foundation of our delicious codfish soup: the anchovy broth. In a pot, combine 1L of water, dried anchovies, Diphuri, kelp, and a piece of radish. Bring to a boil over high heat. Once boiling, reduce the heat to medium, cover, and simmer gently for about 40 minutes to extract a deep and refreshing flavor. For a cleaner taste, you can remove the kelp after about 10 minutes.
Step 2
While the broth is simmering, prepare the vegetables. Slice the radish into approximately 0.5cm thick, flat pieces. Cut the zucchini and onion into similar-sized pieces (half-moons or squares). Wash the crown daisy and cut it into 3cm lengths to add its fragrant aroma at the end.
Step 3
I purchased a pack of pre-cleaned codfish from the supermarket. Gently rinse the codfish pieces under cold water to remove any blood or impurities. Lightly pat them dry with a paper towel. This step helps ensure a clearer broth.
Step 4
Transfer the prepared anchovy broth to a clean pot. Add the sliced radish and bring it back to a simmer over medium heat. Cook until the radish is halfway tender and slightly translucent, allowing its refreshing essence to infuse into the broth.
Step 5
Once the radish is tender, carefully add the codfish pieces to the pot. Next, add the zucchini, onion, and minced garlic. Continue to simmer over medium heat until the codfish is cooked through and flakes easily. Gently test the codfish to ensure it’s cooked. Before serving, taste the broth and season it with salt and anchovy sauce to your preference. Anchovy sauce adds a wonderful umami depth.
Step 6
Finally, just before serving, add the chopped crown daisy and green onions to the soup. Let it simmer for another minute to allow their flavors to meld. The fragrant crown daisy and the fresh taste of the green onions will elevate the soup’s aroma and flavor. For an extra kick, you can add a pinch of black pepper or thinly sliced Cheongyang chili peppers if you enjoy a spicier soup.
