Essential Ingredients
  • Spaghetti for 1 serving (approx. 100g)
  • 3 cups water (approx. 600ml)
  • 1/4 onion, thinly sliced
  • 2 button mushrooms, sliced
  • 6 shrimp, peeled, deveined, and scored
  • 1/4 squid tentacles, cut into bite-sized pieces
  • 1 Tbsp minced garlic
  • Olive oil, for sautéing

Sauce Ingredients
  • 2 cups tomato sauce (approx. 400ml)
  • 1 Tbsp gochujang (Korean chili paste)
  • 1/2 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Thinly slice the onion. Lightly rinse the button mushrooms under running water and then slice them into 3-4mm thick pieces.

Step 2

Next, we’ll prep the seafood. Peel the shrimp and remove the devein from the back. Make 2-3 shallow scores along the back with a knife; this helps the sauce penetrate better and gives the shrimp a nice shape when cooked. Cut the squid tentacles into approximately 2cm long, bite-sized pieces.

Step 3

Now it’s time to cook the pasta. Pour 3 cups (approx. 600ml) of water into your clay pot and add about 1/2 teaspoon of salt. Once the water comes to a boil, add the spaghetti. Cook for approximately 7 minutes, or about 1-2 minutes less than the time indicated on the pasta package. The depth of the clay pot helps the noodles cook evenly.

Step 4

While the pasta is cooking, carefully remove the cooked pasta from the clay pot (reserve some pasta water!). Add a generous amount of olive oil to the same pot and heat over medium heat. Add the minced garlic and sauté until fragrant, being careful not to burn it. Add the sliced onions and cook until they become translucent.

Step 5

Add the prepared shrimp, squid, and sliced mushrooms to the clay pot. Sauté everything together over medium heat until the seafood is cooked through. The shrimp should turn pink, and the squid should become opaque. Season lightly with salt and pepper at this stage.

Step 6

Now, let’s add all the sauce ingredients. Stir in the tomato sauce, gochujang, and gochugaru. Bring the sauce to a simmer. Add the spaghetti you cooked earlier and about 1/2 cup (approx. 100ml) of the reserved pasta water. The starch in the pasta water will help thicken the sauce. Continue to cook for about 2 more minutes, allowing the sauce to coat the pasta beautifully, and your delicious clay pot pasta is ready!
