Main Ingredients
  • 165g cake flour (low-gluten flour)
  • 80g unsalted butter, softened
  • 50g granulated sugar
  • 50g brown sugar
  • 2g salt
  • 3g baking powder
  • 60g chocolate chips / chopped nuts (e.g., almonds, walnuts)
  • 3-4g ground cinnamon (adjust to taste)
  • 1 large egg, at room temperature

Cooking Instructions

Step 1

Prepare the nuts for your cookie dough. For almonds, lightly toasting them in the oven beforehand will enhance their nutty flavor. Once toasted, chop them into bite-sized pieces. We’ll also be adding chocolate chips to the dough.

Step 2

In a bowl, cream the softened butter until smooth. Then, add the granulated sugar and brown sugar. Mix until the sugars are well incorporated and the mixture is light and fluffy. You’ll know it’s ready when it becomes a pale ivory color and the sugar crystals have mostly dissolved.

Step 3

Once the butter and sugar are well combined and the mixture is smooth, add the room-temperature egg. **Tip:** To prevent separation, consider adding the egg yolk first and mixing it in, then adding the egg white. Mix thoroughly until the egg is fully incorporated and the batter is smooth and emulsified.

Step 4

Your batter is perfect when it reaches this consistency. It should be smooth and glossy.

Step 5

Sift the cake flour, baking powder, salt, and ground cinnamon into the batter. Using a spatula, gently fold the ingredients together using a ‘cutting’ or ‘folding’ motion, like drawing a ‘#’. Mix just until no dry flour streaks remain. Be careful not to overmix, as this can lead to tough cookies.

Step 6

At this stage, the flour is partially incorporated, and the dough is starting to come together. It’s okay if a little bit of flour is still visible.

Step 7

Add the prepared chocolate chips and chopped nuts to the dough. Mix them in evenly. It’s a good idea to wear disposable gloves at this stage to prevent the dough from sticking to your hands. **Preheat Oven:** Preheat your oven to 180°C (350°F) before you start shaping the cookies.

When shaping the dough, use your fingertips to gently press down on the tops of the cookies. This creates attractive little dimples on the surface, making them look even more appealing.

This recipe makes approximately 6 cookies per batch. I doubled the recipe and got two full baking sheets worth. Bake in the preheated oven at 180°C (350°F) for 12-15 minutes, or until golden brown. Keep an eye on them, as oven temperatures can vary. The baking time may differ depending on your oven. Let them cool completely on a wire rack before enjoying your delicious homemade cinnamon cookies!
