On a hot summer day, here’s a dish that minimizes cooking time while maximizing health and flavor. Enjoy these delightful rolls made with chewy noodles and fresh vegetables, dipped in a special Nengmyun sauce. They’re a perfect way to beat the heat!

Main Ingredients
  • Nest Bibim Nengmyun (Spicy Cold Noodles), 2 servings
  • Lettuce, 10 leaves
  • Bean sprouts, 30g
  • Pickled radish (danmuji), 10 slices
  • Cucumber, 1/2
  • Sliced ham, 10 slices
  • Gimmari (seaweed sheets for kimbap), 5 sheets

Sauce
  • Sugar, 0.5 Tbsp
  • Vinegar, 1.5 Tbsp
  • Minced onion, 1/4 portion
  • Salt, 1 tsp

Cooking Instructions

Step 1

Start by preparing your fresh vegetables. Gently wash the bean sprouts and lettuce under running water, then shake off any excess moisture. Wash the cucumber thoroughly as well.

Step 2

Trim the ends of the cucumber and slice it lengthwise into approximately 0.5cm thick strips, discarding the seedy core if preferred. Julienne the pickled radish (danmuji) into similar lengths. Cut the lettuce leaves in half to make them a more manageable size for rolling.

Step 3

Finely mince the onion. Slice the ham pieces in half lengthwise to fit the size of your rolls. Cut the gim vari (seaweed sheets) in half lengthwise as well. (Tip: Placing the rough side of the seaweed sheet facing up can help ingredients adhere better.)

Step 4

Now, it’s time to cook the nengmyun noodles. Bring a pot of water to a boil and add the Nest Bibim Nengmyun noodles. Cook according to the package instructions. Once cooked, immediately rinse the noodles under cold running water to remove excess starch and drain them thoroughly. In a bowl, combine the drained noodles with 0.5 Tbsp sugar, 1.5 Tbsp vinegar, the minced onion, and 1 tsp salt. Gently mix to coat the noodles evenly.

Step 5

With all your ingredients prepared, let’s assemble the Neng Maki rolls!

Step 6

Place one half-sheet of gim vari on a clean surface or bamboo sushi mat, shiny side down. Arrange the fillings diagonally: layer the lettuce leaves, a portion of the seasoned nengmyun noodles, julienned cucumber, pickled radish, and bean sprouts. Be careful not to overfill, as this can make rolling difficult.

Step 7

Using the mat or your hands, carefully and firmly roll the gim vari, enclosing all the fillings. Gently press along the seam to seal it, ensuring the roll holds its shape.

Step 8

Slice the finished Neng Maki rolls into bite-sized pieces and enjoy by dipping them into the delicious Nest Bibim Nengmyun sauce provided!
