Cooking Instructions
Step 1
1. Prepare the Chicken: Begin by carefully separating the meat from the bones of the young chicken. Filleting the chicken into steak-like portions will make it easier to cook evenly.
Step 2
2. Season the Chicken: Generously season the deboned chicken pieces with salt and black pepper. This initial seasoning enhances the natural flavors of the chicken.
Step 3
3. Sear the Chicken: Heat 2 tablespoons of cooking oil in a pan over medium heat. Place the seasoned chicken in the hot pan and sear until golden brown and cooked through, ensuring a crispy exterior and moist interior.
Step 4
4. Prepare the Garnishes: It’s time to prepare the colorful vegetable garnishes that will accompany your steak. Prepping these now will make the plating process smoother.
Step 5
5. Prepare the Vegetables: Thinly slice the button mushrooms. Dice the bell peppers into bite-sized cubes. Cut the asparagus spears into 2cm (approximately 0.8 inches) pieces for easy eating.
Step 6
6. Ready the Cherry Tomatoes: Wash 3 fresh cherry tomatoes thoroughly.
Step 7
7. Sauté the Garnishes: Add a little cooking oil to the pan and sauté all the prepared vegetables. Season lightly with salt and pepper, cooking just enough to retain their fresh texture and flavor.
Step 8
8. Blend the Ginseng: Place the cleaned ginseng root into a blender and process until it forms a smooth puree. This will be the base for your ginseng sauce.
Step 9
9. Make the Meringue: Separate the egg white from the yolk. Whisk the egg white until stiff peaks form to create a light and airy meringue, which will add a delicate texture to the puree.
Step 10
10. Create the Sauce Base: In the pan, combine 5 tablespoons of calamansi pineapple black vinegar, the blended ginseng, 1 tablespoon of prepared mustard, and 1 tablespoon of prepared horseradish. Stir well and gently heat until slightly foamy, allowing the flavors to meld.
Step 11
11. Finish the Puree: Let the sauce base from step 10 cool slightly. Then, gently fold in the prepared egg white meringue. This will create a wonderfully smooth and creamy puree.
Step 12
12. Add Citrus Notes: Stir in 2 tablespoons of lemon juice and a pinch of finely grated lemon zest into the finished puree. The citrus will complement the ginseng, adding a sophisticated aroma and taste.
Step 13
13. Plate the Dish: Arrange the beautifully seared chicken steak, sautéed garnishes, and the velvety ginseng puree artfully on a plate. Garnish with rosemary and parsley for an extra touch of elegance. Enjoy your delicious meal!
