  • A pinch of parsley
  • A pinch of salt
  • A pinch of black pepper

Nourishing Ginseng Puree
  • 1 ginseng root
  • 1 egg white meringue
  • A pinch of prepared horseradish
  • A pinch of prepared mustard
  • 5 Tbsp calamansi pineapple black vinegar
  • 2 Tbsp lemon juice
  • A pinch of lemon zest

Cooking Instructions

Step 1

1. Prepare the Chicken: Begin by carefully separating the meat from the bones of the young chicken. Filleting the chicken into steak-like portions will make it easier to cook evenly.

2. Season the Chicken: Generously season the deboned chicken pieces with salt and black pepper. This initial seasoning enhances the natural flavors of the chicken.

3. Sear the Chicken: Heat 2 tablespoons of cooking oil in a pan over medium heat. Place the seasoned chicken in the hot pan and sear until golden brown and cooked through, ensuring a crispy exterior and moist interior.
