Main Ingredients

  • 250g pre-cooked octopus, chopped
  • 1 onion
  • 2 Korean chili peppers (cheongyang peppers)
  • 1 stalk of green onion
  • 1 handful of dried shiitake mushrooms (soaked in water beforehand)

Seasoning Ingredients

  • 3 Tbsp Doenjang (Korean soybean paste)
  • 1 Tbsp Gochugaru (Korean chili powder)
  • 1 Tbsp minced garlic
  • 1 tsp natural seasoning (e.g., anchovy, kelp, shrimp powder)
  • 400ml octopus boiling water
  • 2 pinches of sugar

Cooking Instructions

Step 1

First, finely chop the onion and the rehydrated shiitake mushrooms into bite-sized pieces. Finely slice the cheongyang peppers for a touch of heat and the green onion for sweetness. (Feel free to add zucchini or tofu for extra texture and flavor!)

Cut the cooked octopus into rough, bite-sized pieces. Avoid chopping it too finely so that you can enjoy its satisfying chewy texture with every bite. This will enhance the savory flavor of the octopus.

Strain the octopus boiling water through a sieve to remove any solids. Pour 400ml of this clear broth into a pot. (For detailed instructions on how to boil octopus, please refer to recipe ID @6897162.)

Now it’s time to add the seasoning ingredients. Add 3 tablespoons of doenjang, 1 tablespoon of gochugaru, and 1 tablespoon of minced garlic. For a hint of sweetness, add 2 pinches of sugar, and for an umami boost, add 1 teaspoon of natural seasoning. (You can substitute the natural seasoning with store-bought dashi broth if preferred.)

Add all the prepared vegetables, octopus, and seasoning ingredients to the pot. Stir well with a spoon to ensure the seasonings are evenly dissolved and combined with the other ingredients.

Bring the mixture to a simmer over medium-low heat. Reduce the heat slightly and let it cook gently until the sauce thickens to a stew-like consistency. Once your delicious octopus Gang-doenjang is ready, spoon a generous amount over hot rice and enjoy!
