Rice Thief! Chewy Octopus Gang-doenjang Recipe
Mix it with hot rice and you won’t be able to stop eating! Enjoy a hearty meal with this chewy octopus Gang-doenjang. It’s a ‘rice thief’ dish that the whole family will love.
Main Ingredients
- 250g pre-cooked octopus, chopped
- 1 onion
- 2 Korean chili peppers (cheongyang peppers)
- 1 stalk of green onion
- 1 handful of dried shiitake mushrooms (soaked in water beforehand)
Seasoning Ingredients
- 3 Tbsp Doenjang (Korean soybean paste)
- 1 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp minced garlic
- 1 tsp natural seasoning (e.g., anchovy, kelp, shrimp powder)
- 400ml octopus boiling water
- 2 pinches of sugar
- 3 Tbsp Doenjang (Korean soybean paste)
- 1 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp minced garlic
- 1 tsp natural seasoning (e.g., anchovy, kelp, shrimp powder)
- 400ml octopus boiling water
- 2 pinches of sugar
Cooking Instructions
Step 1
First, finely chop the onion and the rehydrated shiitake mushrooms into bite-sized pieces. Finely slice the cheongyang peppers for a touch of heat and the green onion for sweetness. (Feel free to add zucchini or tofu for extra texture and flavor!)
Step 2
Cut the cooked octopus into rough, bite-sized pieces. Avoid chopping it too finely so that you can enjoy its satisfying chewy texture with every bite. This will enhance the savory flavor of the octopus.
Step 3
Strain the octopus boiling water through a sieve to remove any solids. Pour 400ml of this clear broth into a pot. (For detailed instructions on how to boil octopus, please refer to recipe ID @6897162.)
Step 4
Now it’s time to add the seasoning ingredients. Add 3 tablespoons of doenjang, 1 tablespoon of gochugaru, and 1 tablespoon of minced garlic. For a hint of sweetness, add 2 pinches of sugar, and for an umami boost, add 1 teaspoon of natural seasoning. (You can substitute the natural seasoning with store-bought dashi broth if preferred.)
Step 5
Add all the prepared vegetables, octopus, and seasoning ingredients to the pot. Stir well with a spoon to ensure the seasonings are evenly dissolved and combined with the other ingredients.
Step 6
Bring the mixture to a simmer over medium-low heat. Reduce the heat slightly and let it cook gently until the sauce thickens to a stew-like consistency. Once your delicious octopus Gang-doenjang is ready, spoon a generous amount over hot rice and enjoy!
