Mochi Dough
  • 1 1/2 cups glutinous rice flour
  • 1 cup water

Cooking Instructions

Step 1

In a large bowl, combine 1 1/2 cups of glutinous rice flour with 1 cup of water. Mix until you have a smooth batter that flows moderately off a spatula. It should not be too thin or too thick. (Tip: Adjust water quantity slightly based on the moisture content of your glutinous rice flour.)

Step 2

Pour the batter into a microwave-safe bowl. Cover with plastic wrap and poke a few holes in the wrap with a toothpick or fork. Microwave on high for 1 minute, stir, then microwave for another minute, stir, and microwave for a final minute. (Total cooking time: 3 minutes.)

Step 3

Carefully remove the hot mochi dough from the microwave. Using a spatula or chopsticks, stir and knead the dough vigorously until it becomes smooth and develops a chewy, elastic texture. This step is crucial for the mochi’s signature chewiness.

Step 4

Lightly dust your work surface and hands with cornstarch to prevent the mochi from sticking. This will make shaping much easier.

Step 5

Divide the mochi dough into small portions and roll each portion into a ball. Shape them into bite-sized rounds. Place the shaped mochi onto a tray lined with parchment paper, ensuring they don’t touch each other. Freeze for about 10 minutes until slightly firm. This helps them hold their shape when coated.

Step 6

Place 1 cup of dark chocolate chips or chopped chocolate into a microwave-safe bowl. Microwave in 15-second intervals, stirring well after each interval, until the chocolate is fully melted and smooth. Be careful not to overheat.

Step 7

Repeat the melting process for the green tea (matcha) chocolate and the strawberry flavored chocolate, using separate bowls for each. Ensure all chocolates are melted and smooth before proceeding.

Step 8

Remove the chilled mochi from the freezer. Dip each mochi into the melted dark chocolate, using a skewer or fork to turn and coat it evenly. Let any excess chocolate drip off.

Step 9

Place the chocolate-coated mochi back onto the parchment-lined tray. Either freeze them again until the chocolate coating is firm, or let them set at cool room temperature for about 1 hour. (Tip: For a firmer coating, freeze. For a softer set, use room temperature.)
