Acorn Jelly Salad Main Ingredients
  • 300g acorn jelly
  • 5 leaves fresh kale
  • 5 leaves crisp red mustard greens
  • 5 slices carrot
  • 1 Cheongyang chili pepper
  • 1/2 large green onion

Flavorful Dressing
  • 3 Tbsp soy sauce
  • 1/2 Tbsp minced garlic
  • 3 Tbsp plum extract (maesilcheong)
  • 1 Tbsp red chili flakes (gochugaru)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the acorn jelly by cutting it into bite-sized pieces, approximately 1.5cm thick. Wash the kale and red mustard greens thoroughly, pat them dry, and then cut them into 3cm lengths. Ensuring uniform vegetable sizes will make the salad look more appealing and easier to eat.

Step 2

Peel and wash the carrot, then slice it thinly into half-moon shapes. For the Cheongyang chili pepper, remove the seeds and slice it very thinly to add a pleasant heat. Thinly slice or chop the green onion, using both the white and green parts for a fragrant aroma. You can adjust the amount of chili seeds to control the spiciness to your liking.

Step 3

Let’s make the delicious dressing! In a wide bowl, combine 3 Tbsp soy sauce, 3 Tbsp sweet plum extract, 1/2 Tbsp fresh minced garlic, and 1 Tbsp red chili flakes. Add all the thinly sliced green onion to the bowl and mix everything thoroughly with a spoon. It’s important to stir well until the ingredients in the dressing are fully incorporated.

Step 4

Now it’s time to mix the prepared vegetables with the dressing. First, add the cut kale, red mustard greens, and shaped carrots to the dressing bowl. Gently mix them to allow the vegetables to absorb the flavors. Finally, carefully add the bite-sized acorn jelly. Toss gently to combine, being careful not to break the jelly. The key is to mix everything softly so the jelly and vegetables are well coated with the dressing.

Step 5

Lastly, let’s add the finishing touches for extra flavor! Sprinkle 1 Tbsp of fragrant sesame oil and 1 Tbsp of toasted sesame seeds over the salad.
