Main Ingredients
- 2 fresh squids (choose fresh and plump ones)
- 7 cloves garlic, minced (adds fragrant flavor)
- 2 Tbsp coarse sea salt (for pickling the squid)
- 4 Tbsp soju (removes gamey smell and aids in osmosis)
- 3 Korean green chili peppers, chopped (adjust to your spice preference)
- 2 red chili peppers, chopped (adds color and slight sweetness)
- 8 stalks of green onions, chopped (adds crisp texture and aroma)
- 1/4 onion, finely chopped (adds a subtle sweetness)
Seasoning Ingredients
- 3 Tbsp gochugaru (coarse Korean chili powder)
- 3 Tbsp fine gochugaru (for a vibrant color)
- 2 Tbsp anchovy fish sauce (secret ingredient for deep umami)
- 1 Tbsp plum extract (adds sweetness and umami)
- 2.5 Tbsp oligosaccharide (for shine and subtle sweetness)
- 1 Tbsp ginger extract (or 1/2 tsp grated ginger, to enhance flavor)
- 2 Tbsp toasted sesame seeds (adds nutty flavor and texture)
- 3 Tbsp gochugaru (coarse Korean chili powder)
- 3 Tbsp fine gochugaru (for a vibrant color)
- 2 Tbsp anchovy fish sauce (secret ingredient for deep umami)
- 1 Tbsp plum extract (adds sweetness and umami)
- 2.5 Tbsp oligosaccharide (for shine and subtle sweetness)

Cooking Instructions
Step 1
Thoroughly wash the fresh squids. Peel them and rinse several times under running water to remove any impurities. Peeling the skin allows the marinade to penetrate better and makes them cleaner to eat.
Step 2
Drain the prepared squid and cut it into bite-sized strips. Avoid cutting them too thinly, as this can reduce the chewy texture. Cutting them about 0.5 cm thick is recommended.
Step 3
In a bowl, combine the sliced squid with 2 Tbsp of coarse sea salt, 4 Tbsp of soju, and 7 cloves of minced garlic. Mix well, then cover with plastic wrap and let it marinate in the refrigerator for one day. This process will make the squid tender and deepen its flavor.

After marinating for a day, place the squid in a sieve and press out excess liquid. This step is crucial to prevent the marinated squid from becoming watery and to ensure the marinade adheres well.

Finely chop the Korean green chilies, red chilies, green onions, and onion. The minced garlic is already prepared separately. Ensure the vegetables are finely chopped so they blend well into the squid marinade.

Add the gochugaru (both coarse and fine) to the drained squid and mix until evenly coated. Coating with chili powder first helps the marinade stick better to the squid.

Now, it’s time to add all the seasoning ingredients. Mix in 2 Tbsp of anchovy fish sauce, 1 Tbsp of plum extract, 2.5 Tbsp of oligosaccharide, 1 Tbsp of ginger extract, and the chopped green chilies, red chilies, green onions, and onion. Mix thoroughly with your hands, ensuring all ingredients are well combined.
Step 8
Finally, sprinkle in 2 Tbsp of toasted sesame seeds for a nutty finish and your delicious marinated squid is ready! While it’s tasty right away, letting it marinate for another day in the refrigerator will further deepen the flavors for an even more exquisite taste.
