Main Ingredients
  • Dried octopus 300g
  • Green onion (half stalk)
  • Red chili pepper 1

Seasoning
  • Minced garlic 1 tsp
  • Cooking wine (Mirin, etc.) 1 Tbsp
  • Sesame oil 1 tsp
  • Ginger juice 1/2 tsp
  • Salt 1/2 tsp
  • Pepper, a pinch (to taste)

Cooking Instructions

Step 1

First, prepare the main ingredients for the dried octopus stir-fry: dried octopus, green onion, and red chili pepper.

Step 2

Rinse the dried octopus under running water to remove any dust or impurities. This also helps to slightly adjust its saltiness, making it more tender. Drain thoroughly in a colander.

Step 3

Slice the green onion diagonally. This shape helps it to absorb the sauce better and makes it easier to eat after cooking.

Step 4

Slice the red chili pepper diagonally as well. This adds a touch of color and a subtle spicy kick to the dish.

Step 5

Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the sliced green onion and stir-fry until fragrant to create ‘green onion oil’. This infuses the oil with a wonderful aroma and sweetness.

Step 6

Once the green onion oil is fragrant, add the drained dried octopus to the pan and stir-fry together with the green onion.

Step 7

Now, add the seasoning ingredients: minced garlic, ginger juice, cooking wine, salt, and pepper. Mix well with the octopus.

Step 8

Continue to stir-fry over medium heat, allowing the flavors to meld together. Be careful not to overcook the octopus, as it can become tough. Stir-fry for about 3-4 minutes.

Step 9

Add the sliced red chili pepper and stir-fry briefly. The chili pepper should soften slightly but still retain some texture and color.

Step 10

Taste the stir-fry and adjust seasoning if needed. Add a little more salt if it’s not salty enough. Finally, drizzle in 1 teaspoon of sesame oil for a nutty aroma and flavor.

Step 11

Turn off the heat and serve. Let it cool slightly before storing in an airtight container in the refrigerator. This dish is perfect for making ahead and enjoying as a side dish.
