  • 120g Cake flour
  • 200g Heavy cream
  • 40g Sugar
  • 1/2 Tbsp Ground cinnamon
  • 2g Salt
  • 4g Baking powder
  • 40g Colby Jack cheese (cubed)

First, measure out all your scone dough ingredients. You can combine and measure all ingredients except the Colby Jack cheese together at once to save time.

In a large bowl, combine the measured dry ingredients (all-purpose flour, cake flour, sugar, cinnamon, salt, and baking powder). Whisk them lightly with a spatula or whisk. Then, pour in the 200g of heavy cream and mix until just combined and a cohesive dough forms. It’s important not to overmix; just bring it together into a dough.

Once the dough has come together, gently fold in the cubed Colby Jack cheese. Be careful not to mash the cheese; mix it in lightly so the cheese pieces are distributed throughout the dough.
