Scone Dough Ingredients
- 120g All-purpose flour
- 120g Cake flour
- 200g Heavy cream
- 40g Sugar
- 1/2 Tbsp Ground cinnamon
- 2g Salt
- 4g Baking powder
- 40g Colby Jack cheese (cubed)
Cooking Instructions
Step 1
First, measure out all your scone dough ingredients. You can combine and measure all ingredients except the Colby Jack cheese together at once to save time.
Step 2
Separately, cube the Colby Jack cheese into bite-sized pieces (about 1cm cubes). When baked, the cheese will melt and add wonderful flavor.
Step 3
In a large bowl, combine the measured dry ingredients (all-purpose flour, cake flour, sugar, cinnamon, salt, and baking powder). Whisk them lightly with a spatula or whisk. Then, pour in the 200g of heavy cream and mix until just combined and a cohesive dough forms. It’s important not to overmix; just bring it together into a dough.
Step 4
Once the dough has come together, gently fold in the cubed Colby Jack cheese. Be careful not to mash the cheese; mix it in lightly so the cheese pieces are distributed throughout the dough.
Step 5
Transfer the dough to a lightly floured work surface and gently shape it into a round ball. Don’t worry if the surface isn’t perfectly smooth.
Step 6
Lightly press the dough into a flat disc. Then, fold it into thirds, like folding a letter. Repeat this folding process 2-3 times. This ‘folding’ technique creates layers within the scone, resulting in a flakier texture and a beautiful, layered appearance after baking.
Step 7
Finally, shape the folded dough into a flattened round disc, about 2cm (approx. 3/4 inch) thick. Using a knife, cut the disc into 8 equal wedges, like a pizza. Don’t cut all the way through if you prefer less defined edges.
Step 8
Brush the tops and sides of the scones lightly with milk or an egg wash. This step helps the scones achieve a beautiful golden-brown color during baking.
Step 9
Arrange the shaped scones on a baking sheet lined with parchment paper, leaving some space between them. Bake in a preheated oven at 190°C (375°F) for 25-30 minutes, or until the tops and sides are golden brown and cooked through. Baking time may vary depending on your oven.
Step 10
Once baked, transfer the hot cheesy cream scones to a wire rack to cool slightly. Congratulations, you’ve made delicious cheese cream scones filled with cheesy flavor and a wonderfully tender texture thanks to the heavy cream! Enjoy your homemade treat.
