Main Ingredients
- Approximately 2 blocks of pan-fried tofu, sliced to about 0.8cm thickness
- A handful of dried enoki mushrooms (or shiitake mushrooms)
- 1 red chili pepper
- 1 green chili pepper
Braising Sauce
- 3 Tbsp anchovy and kelp broth
- 3 Tbsp soy sauce
- 1 Tbsp plum syrup (or honey)
- 1 Tbsp perilla oil

Cooking Instructions
Step 1
Slice the prepared pan-fried tofu into pieces about 0.8cm thick. Since the tofu is already fried, it will be firm and easy to handle without breaking.
Step 2
In a wide pan, combine 3 Tbsp anchovy and kelp broth, 3 Tbsp soy sauce, and 1 Tbsp plum syrup. Add the dried enoki mushrooms and bring to a rolling boil over high heat to allow the flavors to meld. (Alternatively, thinly sliced fresh shiitake mushrooms can also be used for delicious results.)
Step 3
Once the sauce is boiling, carefully arrange the sliced tofu in the pan. Reduce the heat to medium-low and let the tofu simmer, allowing it to absorb the savory sauce.
Step 4
Because the tofu is already fried, it holds its shape well during the braising process. Gently shake the pan or use a spatula to carefully flip the pieces occasionally, ensuring the sauce evenly coats everything.
Step 5
Once the tofu has absorbed the delicious, savory sauce and the liquid has reduced to a glaze, add the thinly julienned red and green chili peppers. Toss gently to combine. Finish by drizzling in 1 Tbsp of fragrant perilla oil. Your delicious and savory braised tofu is ready to be enjoyed as a wonderful side dish!
