Step 1

Today, we’re going to make a delicious braised dish using 2 fresh rockfish, which are in season! While excellent grilled, rockfish stew with a savory sauce is also a special treat. To eliminate any fishy smell and ensure the sauce is well-absorbed, we’ll start by lightly pan-frying the fish before stewing. This helps the fish hold its shape and become firm.

Step 2

Rinse the rockfish thoroughly under running water. To help the braising sauce penetrate deeply, make shallow cuts on both sides of the fish with a knife. This process prevents the fish from deforming as it cooks and allows the sauce to seep in further.

Step 3

Heat 1.5 Tbsp of cooking oil in a pan and place the prepared rockfish in it. It’s best to cook over medium heat rather than high heat.

Sear both sides of the rockfish until golden brown. The outer surface will become slightly crispy and develop a savory aroma. Be careful with the heat to prevent burning.

If the rockfish is quite thick, it’s best to cover the pan and cook over low heat to ensure it cooks through. This way, the outside will be golden brown and the inside will remain moist. Basting with oil occasionally will make the pan-fried rockfish even more delicious.

While this pan-fried rockfish is delicious on its own, today we’re going to use it to make a hearty braised rockfish and radish stew. Look forward to a fantastic combination of savory sauce, radish, and rockfish!

Let’s make the sauce that will determine the flavor of the braised rockfish. In a bowl, combine 4 Tbsp soy sauce, 1 Tbsp oligosaccharide, 0.5 Tbsp sugar, and 1 cup (200ml) water. Stir until all ingredients are well dissolved to create a delicious basic sauce.

Simmer over medium-low heat with the lid on for about 5-7 minutes, until the radish becomes translucent. This will make the radish sweetly cooked and infused with the sauce’s flavor.

Once the radish is partially cooked, carefully place the pan-fried rockfish on top. Ladle some of the sauce over the fish to help the seasoning distribute evenly. If the liquid seems insufficient, you can add a little more water while simmering. Continue to braise over medium-low heat for about 10 minutes until the fish is cooked through.

Now, arrange the prepared onion and green onion attractively over the fish. Cover the pot and simmer for just 2-3 minutes more. This will allow the subtle sweetness and aroma of the vegetables to permeate the entire stew.
