Braised Garlic Scapes in Soy Sauce

Main Ingredients
- 1 bunch garlic scapes (approx. 250g)
- 1 Tbsp cooking oil
- 1.5 Tbsp oligosaccharide (or corn syrup)
- 5 Tbsp soy sauce
- A pinch of sesame seeds
Cooking Instructions
Step 1
Trim the garlic scapes, removing any yellowed or wilted leaves and any dirt. Wash them thoroughly under running water. Then, cut them into bite-sized pieces, about 6cm (2.5 inches) long. Cutting them to a manageable size will make them easier to eat.
Step 2
In a pan or pot with some depth, pour in 2 cups (400ml) of water. Add 1 Tbsp of cooking oil, 5 Tbsp of soy sauce, and 1.5 Tbsp of oligosaccharide. If you don’t have oligosaccharide, corn syrup is a good substitute. These seasonings will infuse the garlic scapes with delicious umami.
Step 3
Add the prepared garlic scapes to the pan with the seasonings and bring to a simmer over medium heat. To ensure the scapes absorb the sauce evenly and cook tenderly, stir them occasionally with chopsticks or a spatula. Let them simmer until they become slightly translucent.
Step 4
Continue to braise until the liquid has reduced and the sauce has mostly coated the garlic scapes – that’s it! For a finishing touch of nutty flavor, sprinkle generously with sesame seeds. This delicious braised garlic scape dish makes a wonderful side for any meal.
