  • Onion 50g
  • White part of green onion 30g
  • Chili seeds 1 Tbsp
  • Mirin (Rice wine) 1 Tbsp
  • Doenjang (Fermented soybean paste) 1.5 Tbsp
  • Soy sauce 1 Tbsp
  • Corn syrup 1 Tbsp
  • Apple syrup 2 Tbsp
  • Minced garlic 1 Tbsp
  • Sugar 1 Tbsp
  • Ginger, a little (minced)
  • Sesame seeds, a little
  • Black pepper, a little
  • Fish sauce 1 Tbsp
  • Dark soy sauce 1 tsp (Optional, for color)
  • Onion 50g (for Fresh Salad)
  • Green onions, a little (for Fresh Salad)
  • Vinegar, a little (for Fresh Salad)

Cooking Instructions

Prepare 500g of fresh pork collar. Gently pat it dry with paper towels to remove excess blood. Using fresh, raw pork is key to capturing the meat’s natural flavor. (Korean pork, ‘HanDon’, is recommended).

Score the pork collar. Making thin, shallow cuts will help the marinade penetrate better, resulting in a more tender and flavorful dish. Using a julienne peeler can make this step quick and uniform.

To the blended marinade base, add the remaining ingredients: 1 Tbsp fish sauce, 1 Tbsp corn syrup, and 1 tsp dark soy sauce (this is optional and adds color). Mix everything well to create a uniform marinade.

Coat the scored pork collar evenly with the prepared marinade. Marinate the pork in the refrigerator for at least 30 minutes to 1 hour. This allows the flavors to deeply penetrate the meat, enhancing its taste. (If short on time, even 15 minutes will help.)

Heat 1 Tbsp of cooking oil in a pan over medium-high heat until it’s hot. Reduce the heat to low, then carefully place the marinated pork collar in the pan. Cook slowly, turning occasionally, ensuring it cooks through without burning. Low and slow is the key to juicy perfection.

Let’s prepare a refreshing fresh salad (geotjeori) to accompany the grilled pork. You’ll need 50g of onion and some fresh green onions.

Prepare the geotjeori dressing: combine 2 Tbsp apple syrup, a pinch of salt, a little vinegar, a little minced garlic, and a sprinkle of sesame seeds. Adjust the sweet and sour balance to your personal preference.
