Cooking Instructions
Step 1
Prepare 500g of fresh pork collar. Gently pat it dry with paper towels to remove excess blood. Using fresh, raw pork is key to capturing the meat’s natural flavor. (Korean pork, ‘HanDon’, is recommended).
Step 2
Score the pork collar. Making thin, shallow cuts will help the marinade penetrate better, resulting in a more tender and flavorful dish. Using a julienne peeler can make this step quick and uniform.
Step 3
Before marinating, season the scored pork lightly with 1 Tbsp mirin, 1 Tbsp sugar, and a pinch of black pepper. This preliminary seasoning helps tenderize the meat and reduce any gamey odors.
Step 4
Now, let’s prepare the special marinade for your Maekjeok Gui. The ingredients are common household staples and easily found at any grocery store.
Step 5
In a blender, combine 1.5 Tbsp doenjang, 50g onion, 30g white part of green onion, 1 Tbsp minced garlic, 1 Tbsp soy sauce, 1 Tbsp chili seeds, and 2 Tbsp apple syrup. Blend until smooth. Adding 2 Tbsp of water will help the ingredients blend more easily.
Step 6
To the blended marinade base, add the remaining ingredients: 1 Tbsp fish sauce, 1 Tbsp corn syrup, and 1 tsp dark soy sauce (this is optional and adds color). Mix everything well to create a uniform marinade.
Step 7
Coat the scored pork collar evenly with the prepared marinade. Marinate the pork in the refrigerator for at least 30 minutes to 1 hour. This allows the flavors to deeply penetrate the meat, enhancing its taste. (If short on time, even 15 minutes will help.)
Step 8
Heat 1 Tbsp of cooking oil in a pan over medium-high heat until it’s hot. Reduce the heat to low, then carefully place the marinated pork collar in the pan. Cook slowly, turning occasionally, ensuring it cooks through without burning. Low and slow is the key to juicy perfection.
Step 9
Let’s prepare a refreshing fresh salad (geotjeori) to accompany the grilled pork. You’ll need 50g of onion and some fresh green onions.
Step 10
Thinly julienne the onion. Cut the washed green onions into manageable lengths of about 4-5 cm.
Step 11
Prepare the geotjeori dressing: combine 2 Tbsp apple syrup, a pinch of salt, a little vinegar, a little minced garlic, and a sprinkle of sesame seeds. Adjust the sweet and sour balance to your personal preference.
Step 12
Add the dressing to the julienned vegetables and gently toss with chopsticks. The crisp texture is essential for a great geotjeori, so avoid overmixing. A light, gentle toss is best.
Step 13
And there you have it – your delicious Homemade Grilled Pork Collar (Maekjeok Gui) is ready! We’re confident you’ll fall in love with its rich flavor and aroma. It offers a delightful alternative to typical soy-marinated ribs, promising an unforgettable culinary experience.
