Main Ingredients
  • 118g well-fermented aged kimchi (finely chopped)
  • 1 bowl of warm cooked rice (approx. 200g)
  • 1 egg
  • A small amount of green onion (thinly sliced)

Cooking Instructions

Step 1

First, finely chop the aged kimchi into about 1cm pieces using scissors for convenience. Prepare a bowl of warm cooked rice. This recipe is portioned for one person.

Step 2

Heat a generous amount of cooking oil in a pan. Crack the egg into the pan and fry it. Aim for a sunny-side-up egg with a slightly runny yolk, as this will add a wonderful richness when mixed with the fried rice.

Step 3

Remove the fried egg from the pan and add a little more cooking oil. Sauté the thinly sliced green onions over high heat until fragrant, creating scallion-infused oil. Once the aroma is released, add the chopped kimchi and stir-fry over medium heat until the kimchi becomes slightly translucent.

Step 4

To achieve the appetizing red color of kimchi fried rice, add gochugaru. You can adjust the amount based on your preference for spice and color, or even omit it. Now, it’s time to season with soy sauce. Push the stir-fried kimchi to one side of the pan, and pour the soy sauce into the empty space. Let it caramelize slightly as it heats up to deepen the flavor. Be careful not to burn the soy sauce. Stir well to ensure the soy sauce is evenly absorbed by the kimchi. Continue to stir-fry until the moisture evaporates and the ingredients are well combined. This thorough stir-frying is key to developing flavor.

Step 5

Once the kimchi is sufficiently stir-fried, turn off the heat. Add the warm cooked rice to the pan with the stir-fried kimchi. Using a spatula, gently mix the rice and kimchi together, ensuring they are evenly combined without any lumps. Make sure every grain of rice is coated with the delicious kimchi seasoning. Finally, sprinkle a pinch of sesame seeds over the top for a fragrant finish. Your mouthwatering kimchi fried rice is complete! For an extra treat, top it with the fried egg and enjoy.
