Ingredients
- Mallow (Auk) 300g (before trimming)
- Anchovy-Kelp Broth 1500ml
- Dried Shrimp 1 handful
- Minced Scallion 3 Tbsp
- Minced Garlic 1 Tbsp
- Soybean Paste (Doenjang) 3.5 Tbsp
- Soup Soy Sauce (Guk-ganjang) 1 Tbsp
- Anchovy Sauce (Myeolchi Aekjeot) 1 Tbsp
Cooking Instructions
Step 1
First, let’s prepare the mallow. This is 300g before trimming. Remove the tough stem parts and separate the leaves from the tender stems. Then, wash the mallow vigorously under running water by rubbing it with your hands. Rubbing it firmly like this helps to remove any raw, grassy flavor, ensuring a clean taste. After rinsing two or three times, drain the mallow in a colander and then chop it into bite-sized pieces.
Step 2
Now, it’s time to cook the stew. Pour 1500ml of the prepared anchovy-kelp broth into a pot. Add 3.5 Tbsp of soybean paste and dissolve it thoroughly without any lumps. Then, add a handful of dried shrimp. Turn the heat to high and boil for just 1 minute. Tip: If your dried shrimp are large, cut them in half to help release more flavor into the broth.
Step 3
After boiling for 1 minute, add all the prepared mallow to the broth. Cover the pot with a lid and reduce the heat to medium. Let it simmer for about 5 minutes, or until the mallow is tender. Once the mallow is cooked, add 3 Tbsp of minced scallion, 1 Tbsp of minced garlic, 1 Tbsp of soup soy sauce, and 1 Tbsp of anchovy sauce. Bring it to a boil once more. Finally, taste the stew and adjust the seasoning as needed. If it’s too bland, add a little more soup soy sauce. If it’s too salty, add a bit of water. Tip: For those who enjoy a bit of spice, you can add chili powder or thinly sliced Cheongyang chili peppers at this stage for a kick.
