Cooking Instructions
Step 1
Prepare all your ingredients and measure them out before you begin. This will ensure a smooth cooking process. Select fresh asparagus and good quality beef brisket.
Step 2
Prepare the Asparagus: If the bottom ends of the asparagus are muddy, trim off the very end slightly. Gently peel away any tough, dark, or yellowish outer leaves from the bottom part of the spears. This simple preparation will get your asparagus ready for cooking.
Step 3
Make the Honey Mustard Sauce: In a small bowl, combine the mustard, mayonnaise, finely chopped pickles, honey, lemon juice, and a pinch of salt. Whisk everything together until well blended and smooth, creating a delicious sweet and tangy sauce.
Step 4
Blanch the Asparagus: Bring a pot of water to a rolling boil. Add 1 tablespoon of coarse salt to the boiling water. Dip the thicker, bottom ends of the asparagus spears into the boiling water for about 20 seconds. Then, submerge the entire spears and blanch for approximately 1 minute. Be careful not to overcook, as this will diminish the asparagus’s crisp texture and fresh flavor. Immediately remove the blanched asparagus and rinse them thoroughly under cold running water at least three times. Drain well in a colander until all excess water is removed.
Step 5
Season the Asparagus: Once drained, cut the blanched asparagus into two equal pieces. Place them in a mixing bowl. Add the 2 pinches of fine salt and 1 tablespoon of sesame oil. Gently toss the asparagus to coat evenly, being careful not to mash them. This light seasoning will enhance the asparagus’s natural flavor.
Step 6
Roll the Beef Brisket: Arrange the beef brisket slices lengthwise on a plate or cutting board. Place a moderate amount of the seasoned asparagus onto one end of each brisket slice. Carefully roll the brisket around the asparagus, creating tight rolls. Adjust the amount of asparagus to ensure the rolls are manageable.
Step 7
Sear the Rolls: Heat a non-stick skillet over medium heat. No oil is needed as the beef fat will render. Place the asparagus and beef rolls seam-side down in the hot pan, one by one. Cook, turning them occasionally, until all sides are beautifully golden brown and the beef is cooked through. The beef will become deliciously savory and not greasy.
Step 8
Serve the Asparagus and Beef Rolls: Arrange the beautifully cooked rolls on a serving plate. They are best enjoyed warm.
Step 9
Drizzle the prepared honey mustard sauce over the assembled rolls. Alternatively, you can serve the sauce on the side for dipping. Enjoy this delightful dish according to your preference!
