  • 5 aromatic shiitake mushrooms
  • 2 chewy mankagak (oyster) mushrooms
  • A pinch of Grana Padano cheese for added flavor

  • 1 Tbsp savory soy sauce
  • 2 Tbsp mild sweetener (oligo syrup or allulose)
  • 1 Tbsp tangy vinegar
  • 1 Tbsp zesty lemon juice
  • 1 Tbsp fragrant sesame oil
  • 1/2 Tbsp minced garlic
  • 1 Tbsp smooth olive oil

Cooking Instructions

Step 1

First, wash the fresh lettuce thoroughly under running water. Gently shake off excess water, then tear it into bite-sized pieces by hand. Tearing them into moderate sizes, rather than cutting, helps them blend better with the dressing.

Now, let’s prepare the mushrooms. Trim off the tough base of the mankagak (oyster) mushrooms. Slice the shiitake mushrooms into thin rounds, about 0.5 cm thick. Slicing them thinly will result in a more tender texture after cooking.

Heat a pan over medium heat and add a splash of olive oil. Add the prepared shiitake and mankagak mushrooms. Sauté them until lightly browned, seasoning with a pinch of salt and pepper. The key is to sauté them slowly over medium-low heat to bring out their unique aroma and nutty flavor.

Now, let’s make the delicious dressing! In a small bowl, combine 1 Tbsp soy sauce, 2 Tbsp oligo syrup (or allulose), 1 Tbsp vinegar, 1 Tbsp lemon juice, 1 Tbsp sesame oil, 1/2 Tbsp minced garlic, and 1 Tbsp olive oil.
