This recipe features a nutritious and satisfying one-bowl meal where bean sprouts are cooked separately, their broth used to cook the rice, and then topped with the tender sprouts for mixing. The special dill seasoning sauce, made with fragrant spring dill, elevates the flavor of the bean sprout rice to another level. Main Ingredients
  • 1 bag bean sprouts (approx. 300g)
  • 2 pieces dried kelp (5x5cm)
  • 1 Tbsp perilla oil
  • 2 Tbsp soup soy sauce
  • Butter, to taste
  • 4 eggs

Dill Seasoning Sauce
  • 5 Tbsp soy sauce
  • 1 Tbsp corn syrup or sugar (or plum/fruit syrup)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds
  • 1 handful fresh dill, chopped (approx. 50g)
  • 2 red chili peppers

Cooking Instructions

Step 1

First, wash the bean sprouts thoroughly. In a pot, add the bean sprouts and 2 cups of water. Cover and boil over medium-high heat for about 5 minutes. Once the bean sprouts are cooked, rinse them under cold water, drain, and set aside. Strain the bean sprout cooking water; this will be used as your rice broth. Use slightly less rice water than you normally would to achieve a firmer, fluffier rice texture.

Step 2

While it’s common to add vegetables like mushrooms or carrots for added nutrition and flavor, today we’ll focus on highlighting the natural taste of bean sprouts by using only their cooking water for the rice. Place the washed rice in your rice cooker, add the prepared bean sprout broth and the kelp pieces, and set it to cook.

Step 3

While the rice is cooking, before adding the rice and water to the cooker, stir in 1 Tbsp of perilla oil and 2 Tbsp of soup soy sauce into the water. This simple step infuses each grain of rice with a rich, savory flavor, making the rice much more delicious. Press the cook button on your rice cooker and wait for the rice to be perfectly cooked.

Step 4

Check the perfectly cooked rice. The grains are distinct and the rice has a wonderfully firm texture!

Step 5

Now, let’s prepare to enjoy the bean sprout rice. Generously top the rice with the warm, cooked bean sprouts. Add a fried egg, cooked to your liking, and a knob of butter for added richness.

Step 6

Prepare the dill seasoning sauce. In a bowl, combine 5 Tbsp soy sauce, 1 Tbsp corn syrup or sugar, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. Add the chopped fresh dill (about a handful) and finely minced red chili peppers (2). Mix everything together thoroughly. For sweetness, you can substitute plum syrup or fruit syrup for corn syrup or sugar according to your preference.

Step 7

(Optional) If you have leftover ground pork in your refrigerator, you can stir-fry it with bulgogi seasoning and use it as a topping (‘meat soboro’) for the bean sprout rice, making it even more hearty and delicious. Utilizing leftover ingredients this way is a great idea.

Step 8

On top of the warm rice, add a generous amount of the prepared bean sprouts, a pat of flavorful butter, the dill seasoning sauce, and a golden fried egg. Mix it all together and savor the explosion of flavors and aromas! This completes a fantastic meal that is both healthy and delicious.
