- Curry powder, 1/2 tablespoon

Step 1
Prepare the fresh oysters. Gently rinse the oysters in cold water with 1 tablespoon of salt added, then drain them well. This process helps to remove any unpleasant odor and impurities. It’s crucial to drain the oysters completely on a colander; excess water can cause the coating to peel off during cooking.

In a bowl, combine the frying powder and curry powder, mixing them thoroughly to create the coating base. Adding curry powder enhances the flavor of the fried oysters and masks any gamey taste. In a separate bowl, crack 2 eggs and whisk them until smooth to make the egg wash.
