  • 1.5 Tbsp Miso Paste
  • 1 Tbsp Minced Garlic
  • 1.5 Tbsp Oligodang (or corn syrup)
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

First, prepare the aralia shoots by trimming them. Cut off the tough bottom ends and gently peel off any rough outer skin. Rinse them thoroughly multiple times to remove any dirt or debris, then pat them dry.

Bring a large pot of water to a rolling boil. Once boiling, add 1/2 Tbsp of salt. Carefully add the prepared aralia shoots and blanch them for about 30 seconds to 1 minute. Be careful not to overcook them, as they can become mushy.

Immediately remove the blanched aralia shoots and rinse them under cold running water 2-3 times. This helps to preserve their vibrant green color and mellows out their slightly bitter taste. Gently swish the shoots in the cold water as you rinse.

Gently squeeze out excess water from the aralia shoots and then cut them into bite-sized pieces. You can split longer shoots lengthwise or cut them into 2-3 segments, depending on your preference. It’s also nice to naturally tear them along the fibers.

Add 1.5 Tbsp of miso paste, 1 Tbsp of minced garlic, 1.5 Tbsp of oligodang, and 1 Tbsp of sesame oil.
