  • 2 Tbsp sesame oil
  • 1 Tbsp minced garlic

Begin by trimming any yellow or wilted leaves from the spinach. Gently clean the root ends and make a cross-shaped incision at the base of the roots. This helps the spinach cook evenly and absorb the seasoning better.

Bring a generous amount of water to a rolling boil in a pot. Add half a tablespoon of salt to the boiling water. Carefully add the prepared spinach and blanch it very briefly, just until the leaves wilt, about 30 seconds to 1 minute. Be careful not to overcook, as this will make the spinach mushy and diminish its texture.

Immediately after blanching, rinse the spinach thoroughly under cold running water. This is crucial to remove any remaining dirt or impurities. Once clean, gently but firmly squeeze out as much water as possible from the spinach. Properly draining the water prevents the dish from becoming watery and ensures the seasoning adheres well. Place the drained spinach in a mixing bowl.
