  • 1 cup water
  • 1 tsp anchovy sauce
  • 1 tsp Dasida (or MSG)
  • 1 tsp oyster sauce
  • 2 Cheongyang peppers (adjust to spice preference)
  • 4 cloves garlic (sliced or minced)

Cooking Instructions

Step 1

First, let’s prepare the perfect soft-boiled eggs, the foundation of delicious braised eggs. In a pot, combine 3 cups of water, 1 tablespoon of coarse salt, and 1 tablespoon of vinegar. The vinegar and salt help make the eggshells easier to peel later. Carefully place 10 eggs into the water and boil over high heat for exactly 12 minutes. It’s crucial to start your timer immediately and stick to 12 minutes! Once boiled, immediately transfer the eggs to a bowl of ice-cold water and let them cool completely. Chilling them thoroughly in cold water ensures the shells will peel off smoothly, leaving you with beautiful white eggs.

Now it’s time to give the eggs a flavorful soy sauce bath! Place the 10 peeled, soft-boiled eggs into a pot or a wide pan. Add the main seasoning: 1/2 cup of soy sauce, 1/4 cup of mirin (or cooking wine) for added depth, 1 teaspoon of anchovy sauce for an explosion of umami, 1 teaspoon of Dasida (or MSG) for that magical savory boost, and 1 teaspoon of oyster sauce for a rich, complex flavor. For a touch of heat, add 2 Cheongyang peppers (whole or sliced) and 4 cloves of garlic, either sliced thinly or minced. Pour all these seasoning ingredients over the eggs and bring to a simmer over high heat for about 10 minutes. This step allows the eggs to beautifully absorb the delicious soy sauce color.
